Eggs-actly what I need on a busy morning … egg white smoothie
Anyone who knows me will tell you I’m not a morning person so making time for breakfast can be a challenge. This is why this Egg White Smoothie is by far my favourite breakfast option. Perfect for those mornings when I’m in a hurry or running late. It’s really quick and simple to make. You only need four ingredients: egg whites, banana, peanut butter and almond milk. It packs about 33 grams of protein and 10 grams of healthy fats.

Egg whites – I buy our own Irish O’Egg brand. They are made with free range 100% pasteurised eggs, no preservatives, no additives. Each 500 ml bottle contains 15 egg whites!
Peanut Butter – I recommend using a natural peanut butter such as Meridian brand. It’s a lot healthier and packs more flavour. Peanut butter has protein as well as potassium which lowers the risk of high blood pressure, stroke and heart disease. It also contains fibre to aid with bowel health, healthy fats, magnesium to fortify your bones and muscles, Vitamin E and antioxidants.
Almond milk – I make sure to buy unsweetened almond milk, like Alpro, to avoid sugar. Almond milk contains minerals like calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc. The other nutrients available in this milk include vitamins such as vitamin C, vitamin B6, thiamine, riboflavin, niacin, folate and vitamin E. All these nutrients have various benefits which are essential for a healthy body.
Banana – I buy organic bananas. Bananas are a very good source of vitamin B6 and a good source of manganese, vitamin C, potassium, dietary fibre, potassium, biotin, and copper.
Egg White Smoothie Recipe
• 250 ml of egg whites (equivalent to 7.5 egg whites)
• 250 ml of unsweetened almond milk
• 1 large tablespoon of natural peanut butter
• 1 frozen banana
Throw it all in a blender and whip it up.
It’s that quick and I drink it as I’m getting ready for work.
