Quick and colourful Mixed Bean Salad … a yummy side-dish
This Mixed Bean Salad is one of my favourite side-dishes because it meets three of my cooking criteria – it’s quick, simple and tasty!
All you need is a few ingredients:
- diced peppers (half of each green, yellow and red peppers)
- 400 grams of mixed beans (tinned)
- ½ medium red onion, diced
- chopped parsley
- olive oil
- red wine vinegar
- salt and pepper
Combine all the ingredients in a large bowl. Add olive oil, a splash of red wine vinegar and season with salt and pepper. Mix it well so it’s evenly seasoned. It can be served chilled or at room temperature. I find this salad even tastier the next day.
Not only is this Mixed Bean Salad a tasty side-dish but very healthy too!
